Smoking adds flavor to the meat, fish, and poultry, and provides a small food preservation effect. Frequently, hams, pork roasts, bacon, beef briskets, whole poultry, salmon, herring, and oysters are smoked... The drying action of the smoke tends to preserve the meat.
