The pH affects enzyme activity by altering or inhibiting an enzyme from catalyzing a reaction.  Since catabolism (catabolic metabolism) is the metabolic activity used to degrade molecules to produce simpler constituents and energy, if pH levels are not optimal, metabolism rates will change.
