Why is vinegar used in food preservation?

Vinegar is acidic in nature. It ret ards the growth of the microorganisms, which can grow, contaminate, and spoil the food. This is why vinegar has been used as a preservative, for many years. Foods dipped in vinegar are safe to consume, even after months.
