if i remember i'm pretty sure it was drought/lack of rain which made crops die and managing livestock impossible.

Diseases still existed at the time so the farmers would still have to fight against diseases from infecting their crops. Also during the late 1800s there was the little ice age still going on so there were definitely problems with growing crops since it was too cold to grow anything much.
