This is osmosis...water goes from high concentration to a low concentration. Vinegar is actually a solution of 5% acetic acid in water - so a lot of water. The concentration of water is higher outside the egg than in so water diffuses into the egg. The acid (vinegar) breaks down the shell (calcium carbonate) which helps the egg with its ability to expand!
